I am absolutely obsessed with these carrot cake balls! This is one of my all time favorite desserts to make, especially in the summer. 
I stole this recipe from Joy McCarthy. She is a certified holistic nutritionist based in Canada, and I fell in love with her book! It  was a catalyst for inspiring my passion in holistic nutrition, and she shares so many amazing tips and recipes. 

You can find the full recipe on her blog, but all you really need is a food processor or blender. 

  • 3/4 cup unsweetened shredded coconut 
  • 6 pitted medjool dates 
  • 3/4 cup walnuts 
  • 1/2 cup grated carrots 
  • 1/4 cup hemp seeds 
  • 1/4 cup honey 
  • 1 tsp vanilla 
  • 1 tsp ground cinnamon 
  • 1/2 tsp ground nutmeg 
  • 1/4 tsp ground cloves 

Combine everything in a food processor or blender and form into balls. 

Reserve 1/4 of the shredded coconut to roll your carrot cake balls in
